The winery, led mainly by Alice Bonacorsi and her husband Rosario Pappalardo, known for its commitment to traditional winemaking practices and sustainable farming, ensures that the wine undergoes spontaneous fermentation with native yeasts, followed by aging in large oak barrels for 12 months. This meticulous process results in a wine with firm tannins, balanced acidity, and a long, savory finish.
