Columbu - Cannedu

Vanna Mazzon and Gian Michele Columbu welcome us to their winery in Bosa (Sardinia). Thanks to the characteristics of the soil and the constant blowing of the Mistral wind, the vine expresses itself with exceptional peculiarities. The real magic, however, happens in the cellar: during the wine maturation, the barrels are left half empty. The combined action of oxygen and indigenous yeasts creates a Flor layer which, in contact with the wine, generates the peculiar oxidative taste typical of this niche production.
