Why olive oil matters now

.

In central and southern Italy, olive oil has never been just an ingredient - it is the foundation of everyday cooking.
Yet industrial production and changing habits have distanced many from what was once a shared, daily richness.

Real olive oil - organic, cold-extracted, made in small quantities - has become increasingly rare. Not by choice, but by climate, agriculture, and reality.

This selection is a return to that tradition. A selection of six organic, cold-extracted olive oils, shipped once a year, from small producers in Lazio, Puglia, Sicily, Sardinia, and beyond, all from the new 2025 harvest. Oils meant to be used daily - raw, to finish a dish, but also as a key ingredient in cooking.
