Champagne Hervé Dubois, established in 1920, is a family-run estate located in Avize, a village renowned for its Grand Cru vineyards in the heart of the Côte des Blancs. The Dubois family has been producing exceptional Champagnes for four generations, with the current proprietors, Hervé Dubois and his daughter Nina, upholding the family's commitment to quality and tradition.
The 2017 Grand Cru Brut is crafted exclusively from Chardonnay grapes sourced from the family's vineyards in Chouilly (80%) and Cramant (20%), both esteemed Grand Cru sites. The base wines are vinified in stainless steel tanks, and malolactic fermentation is carried out to enhance the wine's richness. The cuvée then undergoes an extended aging period of 48 months on the lees, contributing to its complexity and depth.
On the nose, it reveals elegant and gourmand notes of pear and almond, complemented by floral scents of acacia. Upon aeration, fresher aromas of lemon, white peach, and pineapple emerge. The palate is supple and fresh, with a creamy effervescence that leads to a full-bodied, fruity texture.
