La Palazzola, a distinguished winery in Umbria, and one of the few farming organically, is known for its exceptional sparkling wines. The Metodo Classico Pas Dosé a la volée is a special wine made exclusively for the Roscioli Wine Club, in which Stefano manually by hand disgorges the wine to help remove any of the unpleasant aromas that can arise from the traditional ways metodo classico wines are disgorged. It’s a blend of Chardonnay and Pinot Nero grapes, cultivated in calcareous clay soils. This wine undergoes traditional bottle fermentation and is aged on the lees for an extended period to develop its complexity. With no dosage added, it has a crisp acidity and a dry finish. Palazzola’s commitment to sustainable farming and meticulous winemaking practices ensures that each bottle is a true representation of the region's terroir.
