La Staffa, led by Riccardo Baldi, is a winery in the heart of Castelli di Jesi, dedicated to crafting Verdicchio that reflects the unique terroir of Staffolo. 'Lo Sparviero' comes from a vineyard planted in 1975, rooted in calcareous clay soils. The 2023 vintage underwent spontaneous fermentation and was aged in cement tanks for six months, followed by bottle aging. This is a lovely Verdicchio with vibrant acidity, layered citrus notes, and a long mineral finish. Only 2,000 bottles were produced, exclusively for the Roscioli Wine Club.
