Canna Torta is a blend of Trebbiano e Malvasia from Podere le Ripi winery. It is an out of the ordinary macerated white wine, the common thread between the Tuscany you know and the taste of a long maceration and vinification in amphora. A wine of surprising sincerity, soft, compliant and with a great texture.

The clay and limestone soils provide a perfect setting for the densely planted vines, which produce grapes with remarkable depth and character. The winemaker Sebastian Nasello avoids synthetic treatments, relying on natural composts and teas to nourish the vines. Spontaneous fermentation and aging in large oak casks, not barriques, allow the wine to develop its balanced structure and nuanced flavors. This approach reflects Sebastian’s belief in minimal intervention and the natural harmony of the vineyard, resulting in a wine that tells the story of its land. Spontaneous fermentation and maceration on the skins for 9 months partly in terracotta amphorae partly in wood. Aged for 5 months in concrete and one month in stainless steel. Only 6000 bottles produced.

What began as Francesco Illy’s dream of beauty upon a wild Montalcino ridge has since blossomed into something far richer than wine—a living ecosystem. Today, together with Sebastian Nasello, the estate’s longtime winemaker and guiding spirit, Podere Le Ripi has become a place where agriculture and philosophy intertwine. Nestled between the eastern and western slopes of Montalcino, where Sangiovese vines live among olive trees, woods, and orchards, the farm pulses with biodynamic vitality. Bees, sheep, and wild herbs shape the landscape; fermentations rise on native yeasts; vessels of wood, concrete, and clay cradle the wines with patience.
