Lambrusco di Sorbara

“Cattabrega” is a tasty and smooth sparkling rosé, an ideal effervescent juice of Modena tradition, a bastion of its territory and the perfect gastronomic companion for any snack based on Emilian gastronomic products. The protagonist of the territory is Lambrusco. The peculiarity to which it owes its name is curious: in autumn not only the leaves turn red, but also the stems and pedicels, hence the relative name. The motif on the label is also interesting, a true declaration of intent, which represents the animal biodiversity of the place and the spontaneity of nature.
Like all the wines in the line, it ferments in the bottle according to the dictates of the ancestral method, which consists of bottling during the first winter cold with a light percentage of sugar in the must. This light residue will reactivate the spontaneous yeasts contained inside the bottles, thanks to the action of the spring warmth, allowing them to carry out a second fermentation which will ultimately give effervescence and creaminess.

Podere Sotto il Noce

Podere Sottoilnoce is Max Brondolo's small winery located on the outskirts of the medieval village of Castelvetro di Modena. The name comes from the imposing walnut tree that stands among the oldest vineyards on the estate (some reach 60 years of age). Max inaugurated his small business in 2017 from a purely artisanal idea, founded on the principles of organic agriculture and Steiner's biodynamic theories. The vineyard area extends over 6 hectares and the most classic varieties of the Emilian tradition are grown, some abandoned and rediscovered: Lambrusco (in its Grasparossa, Fioranese and Sorbara declinations), Trebbiano (in the Spanish and Modenese biotypes) and other native ones such as 'Tosca grape'. Podere Sottilnoce wines recall the most ancient and artisanal Emilian tradition.
