Scirto is a small, family-run winery by both Valeria and Giuseppe, who take equal parts in all vineyard management and work. Following in the footsteps of previous generations, and with vines that date to over 100 years old, they seek to produce wines that reflect the unique characteristics of their terroir. The Don Pippinu Bianco is a blend of Carricante and Catarratto grapes, grown in volcanic soils that impart a distinctive minerality. Fermented in stainless steel tanks to preserve the fresh, vibrant character of the grapes, this wine undergoes a brief aging period to enhance its complexity. The Scirto family’s dedication to organic farming and extremely minimal intervention in the cellar results in a natural wine that is a true expression of the volcanic terroir of Mount Etna.

Giuseppe Scirto and Valeria Franco chose not to sell the family’s vineyards when others did—they chose to honor them. From their high-altitude terraces of black volcanic sand of Etna, at 600–1,000 meters, they tend century-old vines of Carricante, Nerello Mascalese, Nerello Cappuccio, and more—with minimal intervention, no chemistry, and a fierce love for the land. In the cellar, wines are shaped in steel and large oak, following intuition rather than rule.
