SoloUva, the Franciacorta-based winery known for its “grape-only” method, has expanded into Oltrepò Pavese with new vineyards dedicated to this project.
Open follows the same philosophy that defines the estate: using only grape must for the second fermentation, with no added sucrose. The wine is made from Pinot Noir and Chardonnay grown on calcareous soils of the Oltrepò hills, fermented with native yeasts and aged on the lees to develop subtle texture. The profile is clean and dry, with citrus, green apple, and a gentle yeasty note, showing a more linear, straightforward character compared to the Franciacorta cuvées.

Solouva

The Franciacorta Brut is the emblem of SoloUva’s philosophy, a winery founded in 2009 through the vision of Andrea Rutelli. From the very beginning, Andrea embraced the Arcari+Danesi project, which pioneered an innovative method of sparkling winemaking: replacing the sugar normally added at tirage and dosage with reserved grape must and juice. This approach, adopted fully by SoloUva, reflects the estate’s very name—“only the grape”—and the belief that every berry already contains everything needed for true, authentic vinification.
