
Albamocco - 6/Ottavi
This vineyard in Poggio San Marcello, within the Castelli di Jesi DOC, it’s part of our “Roots and Souls” vineyard project and is planted with 30-year-old Verdicchio vines. For this cuvée, the northernmost parcels were selected to preserve acidity and freshness. The idea was to create a sparkling wine refermented in bottle using only the grape’s own must, without adding external sugars or yeasts.
6/8 is inspired by the old single-fermentation method once used for Prosecco. After spontaneous fermentation in steel, a portion of frozen must from the first pressing is added back at bottling to trigger natural refermentation. The result is vibrant and evolving: citrus, green apple, white flowers, and a subtle savory edge. Each glass grows slightly broader and more textured as the wine opens.
