Azienda Agricola Sciara, founded by Hong Kong-born winemaker Stef Yim, is dedicated to producing wines that capture the essence of Mount Etna's unique terroir. It's located in the northern slopes of the mountain, one of the most active volcanic regions in Europe. The Etna Rosso 760 2021 is a blend of Nerello Mascalese and Nerello Cappuccio, two native varieties that thrive in the mineral-rich volcanic soils. The grapes are fermented with native yeasts and aged in older barriques to preserve the fresh fruit character while adding subtle complexity. The wine offers aromas of dark berries, herbs, and a touch of smoke, while the palate is juicy and fresh, with a fine balance of acidity and tannins.
