Fattoria Calcabrina’s Sbuffetti Rosato is a vibrant and refreshing rosé made from Sangiovese grapes grown in the calcareous clay soils of Umbria. The winery, known for its commitment to sustainable/biodynamic farming and traditional winemaking practices, ensures that the wine undergoes spontaneous fermentation with native yeasts, followed by a short period of aging on the lees. This approach enhances the wine’s texture and complexity while preserving its natural acidity. The Sbuffetti Rosato is characterized by its bright acidity, crisp structure, and a touch of minerality, making it a perfect match for a variety of dishes. Fattoria Calcabrina’s dedication to organic farming and minimal intervention ensures that each bottle is a genuine reflection of Umbria’s unique terroir.

Calcabrina

Diego lives in the hills of Montefalco, in the heart of Umbria. After finishing his university studies, he quickly understood that a life behind a desk wasn’t for him. He left behind his degree in accounting and returned to the land—working alongside his father, Angelo, to build something that felt real.
The farm started with goats and a few old vines, and has grown slowly, without ever losing its scale or spirit. They work just a couple of hectares, organically and with biodynamic principles, using natural compost from their animals and doing everything by hand. In the cellar, Diego keeps things as simple as possible: spontaneous fermentations, no filtration, no added sulfites. Each wine is made in tiny quantities and reflects a very personal approach—intuitive, physical, and deeply tied to the land he chose to come back to.
