Dal Forno Romano is known for extremely high-density plantings and rigorous yield reduction. Even for Valpolicella Superiore, fruit is partially dried for several weeks (approx 40 days) to concentrate sugars.
Aromas show black cherry, cocoa, dried herbs, and dark spice. The palate is structured and polished, with firm tannins and integrated oak. Compared to warmer vintages, acidity is more pronounced, giving balance to the richness.

Romano Dal Forno grew up in a farming family in Val d’Illasi (Veneto) and began producing his own wine in the early 1980s. A decisive encounter with Giuseppe Quintarelli encouraged him to pursue his own idea of Valpolicella; today his sons work alongside him at the estate. The winery is known for extremely low yields, rigorous grape selection and long ageing, producing Amarone and Valpolicella with remarkable concentration and an unusually long life.
