
Esole – Ghirada Garaunelea Bianco "Sa Panada" 2023
In the rugged hills of Mamoiada, in the heart of Barbagia, Esole is quietly rewriting the story of Sardinian white wine. "Sa Panada" is made from Granazza, a rare local grape traditionally used in blends but here given the spotlight it deserves. Grown in a ghirada—a distinct vineyard plot—on granite-rich soils and farmed with traditional methods, the grapes are hand-harvested and fermented spontaneously with native yeasts. A gentle maceration on the skins adds texture and depth, followed by aging in large oak casks and further rest in bottle.
The result is a white wine of presence and identity: floral and sunlit on the nose, savory and mineral on the palate. It carries the warmth of the island, but with a fresh, vertical soul.
