Esole – Ghirada Garaunelea Bianco "Sa Panada" 2023

n the rugged hills of Mamoiada, in the heart of Barbagia, Esole is quietly rewriting the story of Sardinian white wine. "Sa Panada" is made from Granazza, a rare local grape traditionally used in blends but here given the spotlight it deserves. Grown in a ghirada—a distinct vineyard plot—on granite-rich soils and farmed with traditional methods, the grapes are hand-harvested and fermented spontaneously with native yeasts. A gentle maceration on the skins adds texture and depth, followed by aging in large oak casks and further rest in bottle.
The result is a white wine of presence and identity: floral and sunlit on the nose, savory and mineral on the palate. It carries the warmth of the island, but with a fresh, vertical soul.
