Azienda Agricola Sciara, founded by Hong Kong-born winemaker Stef Yim, is dedicated to producing wines that capture the essence of Mount Etna's unique terroir. The Etna Rosso 980m is crafted from 100% Nerello Mascalese grapes sourced from high-altitude vineyards situated at approximately 980 meters above sea level. These vineyards, with vines aged between 45 to 80 years, thrive in volcanic soils composed of ash, rocks, and sand, imparting a distinct minerality to the wine. The high elevation and volcanic soil contribute to the wine's fresh acidity and complex flavor profile.
In the cellar, the wine undergoes spontaneous fermentation with native yeasts and is aged in a combination of ceramic amphorae and concrete tanks. The palate is smooth and fresh, with supple tannins supporting flavors of cherry, and spearmint, leading to a long finish.

Azienda Agricola Sciara

Nestled on the volcanic slopes of Mount Etna, Azienda Agricola Sciara was born from the dream of Stef Yim, a Hong Kong–born, Los Angeles–bred sommelier who found his calling in Etna’s high-altitude vineyards. He created Sciara in 2014 on ancient, low-yield parcels between 700 and 1,200 meters above sea level. Rather than naming wines after Contrade, he lets altitude speak—760 m, 980 m, 1200 m—because for him, each meter means truth in the bottle. Farming is organic and low intervention, fermentation is natural, and he experiments freely with vessels from amphorae to barriques, crafting wines that reflect Etna’s volcanic soul.
