Asprinio d'Aversa

I Borboni is a historic estate in Campania dedicated to preserving the identity of Asprinio d’Aversa, one of Italy’s most distinctive native grapes. The vineyards are still trained using the traditional alberata aversana system - vines climbing tall poplar trees, sometimes reaching 10–15 meters in height. This ancient method, once widespread in the region, produces naturally high acidity and tension. The estate combines respect for tradition with clean, precise cellar work focused on clarity and freshness.
Vulpis 2023 is sharp, vibrant, saline and driven by acidity. The texture is lean and energetic, finishing with a clean, mineral snap.

I Borboni

The foundation of I Borboni winery originated from the roots of the Numeroso family, owner of the estate since the second half of the 1700s. The winery counts twenty hectares of land planted with vines with the legendary form of farming known as "vigne maritate": vines are grown as climbing plants on poplar poles with an average height of 6 to 10 meters (20 to 30 feet).
The traditional vinification of Asprinio is thus recovered in the caves, dug at a depth of 15 meters under the manor houses, unique for their environments particularly suitable for conservation, able to ensure the right humidity, absence of light and constant temperature throughout the year.
