Cappuccetto Rosa from Podere le Ripi is a vibrant rosé made from Sangiovese grapes grown in biodynamically farmed vineyards. The name "Cappuccetto Rosa" evokes the whimsical image of "Little Red Riding Hood," reflecting the wine's playful and enchanting character. This rosé is produced entirely from Sangiovese grapes, the noble varietal famous for its role in Brunello di Montalcino wines. The grapes are hand-harvested and all vineyard management is done with the utmost respect for the natural environment.

The juice undergoes a brief maceration period with the skins to extract the delicate pink color and subtle tannins. The must is then fermented in stainless steel tanks at controlled temperatures. The fermentation process is spontaneous, relying on native yeasts present on the grape skins and in the winery, which contributes to the wine's unique character and complexity. After fermentation, it’s aged on its lees for several months in stainless steel tanks. No synthetic additives or chemicals are used throughout the winemaking process, staying true to Sebastian's philosophy of natural winemaking.
