Azienda Agricola Sciara, founded by Hong Kong-born winemaker Stef Yim, is dedicated to producing wines that capture the essence of Mount Etna's unique terroir. It's located in the northern slopes of the mountain, one of the most active volcanic regions in Europe. 

Made from Carricante and Catarratto, with a small percentage of local white varieties including Minnella Bianca, Minellone, and Garganega. The grapes undergo around 30 days of skin maceration in stainless steel and ceramic amphorae, followed by roughly 20 months of aging across the different vessels before blending and bottling.
It has delicate honey notes, intense citrus aromas, and a subtle smoky-spicy edge. The palate is fresh and deeply drinkable, with balanced acidity, marked minerality and salinity.

Azienda Agricola Sciara

Nestled on the volcanic slopes of Mount Etna, Azienda Agricola Sciara was born from the dream of Stef Yim, a Hong Kong–born, Los Angeles–bred sommelier who found his calling in Etna’s high-altitude vineyards. He created Sciara in 2014 on ancient, low-yield parcels between 700 and 1,200 meters above sea level. Rather than naming wines after Contrade, he lets altitude speak—760 m, 980 m, 1200 m—because for him, each meter means truth in the bottle. Farming is organic and low intervention, fermentation is natural, and he experiments freely with vessels from amphorae to barriques, crafting wines that reflect Etna’s volcanic soul.
